Kimchi & Eggs

One of my favorite ways to break the fast!
Kimchi & Eggs

Ingredients List

  • 2 Slices Spam, diced

  • 1 clove garlic, minced

  • 1 scallion, sliced thinly

  • 2 TBSP Avocado oil

  • 1 c. cold, prepared rice

  • ½ c. A. Co. Kimchi PLUS 3 TBSP reserved for top

  • 2 eggs

  • Furikake Rice Seasoning

Simple Step-By-Step

  1. In a small saute pan, heat Avocado oil to medium high heat and begin to saute Spam.

  2. Once Spam has started to crisp, add rice and break up in the pan using a spatula. Add ½ c. of Kimchi, garlic, and scallion to rice. Saute until rice is heated through.

  3. Melt a couple TBSP of butter in a separate pan, and crack those eggs into the pan. Cook eggs to your preference. (I prefer mine over easy, but feel free to cook the eggs to your liking–this is also a great recipe base for fried rice w/scrambled eggs!)

  4. ASSEMBLY TIME!
    — Rice
    — Eggs
    — Reserved Kimchi
    — Furikake
    — More Kimchi because it’s flipping delicious

  5. Chow Time!
